Bitter orange peel is derived from the fruit of the bitter orange tree (Citrus aurantium), a citrus species native to Southeast Asia. The peel is obtained by removing and drying the outer layer of the fruit. The bitter orange peel has a rough, dimpled surface and is thicker than the peel of sweet oranges. When fresh, it has a vibrant orange color, which darkens as it dries. The dried peel is firm and has a slightly harder texture compared to fresh peel. Bitter orange peel has a distinctive flavor profile that sets it apart from sweet orange peel. It combines a pronounced bitterness with a tangy, citrusy taste and a subtle underlying sweetness. The peel also contains aromatic essential oils, primarily limonene and linalool, which contribute to its strong, refreshing scent.
